I see on the character builder, Wardens
have shield spec. Is this true?

On this patch level, yes.

You'll probably do a spec similar to these if you're grouping. Heal and peel...

46 Nurture
42 Shield
34 Regrowth
10 Blades

Do you think I'd be disliked in groups for a build like 46 Nurture, 25 Regrowth, 34 Blunt, and 35 Shield?

If I play a Warden I'm going to want to try to get use out of the melee healing process.

As long as you have some heals and yellow/red cele/pbt you are good to go

you will not do much healing with the melee proc. Its nice to have but its nothing compared to a healer. if you want to go this way, maybe spec 10 blunt for snare and other points in to shield and then you have the lvl 42 slam (9sec stun) and you can although hit with shield which probably do more dmg then your weapon and you will although trigger the healproc.
